Every dacha should have it - a brick barbecue with a smokehouse

Photo 1

Brick barbecues with built-in smokehouses are built on private or summer cottage plots. The structures take up space from one square meter to ten or more.

Simple structures include only a barbecue grill and a smoker, while complex ones are complemented by compartments for firewood, additional stoves, sinks and cutting tables.

The main material for construction is firebrick, and additional elements (firebox doors, barbecue grills, etc.) are manufactured made of steel and cast iron.

Pros and cons of building a brick barbecue with a smokehouse with your own hands

The advantages of making your own smokehouse with barbecue include:

  • the ability to independently plan the type of construction;
  • control of all stages of construction;
  • savings on materials and labor costs.

Important! To build a complex structure with your own hands, you will need careful planning of all stages of construction and competent engineering calculations.

The main disadvantage of making a smokehouse with your own hands is complexity of the procedure for people who have no experience in construction.

The main elements present in every smokehouse with barbecue:

  • firebox;
  • barbecue grill;
  • smoking chamber;
  • chimney pipe.

Topok there may be several, each located under a smokehouse or barbecue grill. The flue pipes from the smokehouse and barbecue are connected at the top into a common pipe.

Typical Design options for smokehouses with barbecue:

  1. barbecue with top smoker;
  2. corner smokehouse;
  3. smokehouse of the "Russian stove" type;
  4. Smokehouse with open barbecue grill.

The first option, in which the smoking chamber is located directly above the barbecue grill, takes up little space (1-1.5 sq. m) and is suitable for construction on small plots.

In the second version, the main fireplace has a barbecue is located in the center, and on the sides there are two additional fireboxes with a stove and a smokehouse above them. The side fireboxes are located at right angles to each other, so they make the design convenient for installation in the corner of a country house or veranda.

The smokehouse is similar to a Russian stove corner central chimney, several fireboxes and main chimney. In addition to the smokehouse and barbecue area, it is equipped with an oven, stove and a place for drying firewood. This design is chosen if there is enough space and the willingness to bear the costs of building materials.

Vertical smokehouse with an open barbecue fire attached to the side, without a chimney, suitable For outdoor use only. The open barbecue grill allows the cook to approach the appliance from any side.

Preparing for construction

When choosing a brick, not only its color and size are taken into account, but also marking. For a standard design you will need two types of bricks:

  • refractory;
  • building.

Firebricks are selected with markings ШБ-I or ПБ-I, and for large structures - brands SHAK.

Attention! A hollow sound when tapping a brick means the presence of voids and low quality, and small crumbs when splitting indicate low strength or possible use of the material earlier.

For the construction of structural elements that are not exposed to high temperatures, building clay bricks of the following grades are suitable: M-125 or M-150.

For the bonding solution, either refractory cement, or ordinary with the addition of limestone.

Estimated cost estimate

For construction standard street version, consisting of a grill with a firebox for barbecue preparation and a smoking chamber for hot smoking, The following materials will be required:

  • firebrick - 50-80 pieces, 800-1600 rubles;
  • clay brick - 230-250 pieces, 1900-2500 rubles;
  • cement - 2-3 bags of 40 kg, 500-800 rubles;
  • crushed stone and reinforcement for the foundation - 500-1000 rubles;
  • corners, hinges and metal for the grille - 500-1500 rubles;
  • firebox doors - 500-1000 rubles.

In total, to build a smokehouse with barbecue you will need: from 5000 to 8500 rubles. The cost of additional elements (lamps, sinks, decorative trim) can increase the total amount by 2000-4000 rubles.

Necessary tools

Basic list of tools and auxiliary materials for building an outdoor structure includes:

  • a shovel and a rule;
  • formwork boards;
  • waterproofing film;
  • welding machine;
  • trowel and hammer for masonry;
  • sand and limestone for mortar;
  • pliers, nails and a hammer.

To mix the cement solution you will need bucket or tank. When laying, it is used for leveling. string and a building level.

Manufacturing process

The sequence of the main steps for making a barbecue with a smoker:

  1. pouring the foundation;
  2. firebrick firebox laying;
  3. installation of grilles, doors and smoking chambers;
  4. laying the outer casing and chimney;
  5. installation of external elements.

Before carrying out work on the site a place is selected and cleared for construction in accordance with the selected design drawing.

Installation of the foundation

The foundation is poured into the area under the future brick structure so that the foundation borders protrude 5-10 cm beyond the edges brickwork.

Photo 4. The process of making an arc-shaped foundation for a barbecue oven. A sealed film coating is required over the cement.

Foundation pouring algorithm:

  1. The top fertile layer of soil is removed and a hole is dug to a depth 0.4-0.8 meters.
  2. A layer of crushed stone is poured onto the bottom of the pit 0.1-0.3 meters.
  3. Formwork is knocked together around the edges of the pit from boards of thickness 10—20 mm.
  4. A lattice structure with cells is assembled from reinforcing bars using welding.
  5. The reinforcement is filled with cement mortar in stages, every 15 cm layers dry out at least 24 hours.
  6. The top layer of the foundation is leveled and covered with a sealed film. until completely dry.

The average diameter of the reinforcement cell is 10-25 cm, and the diameter of the rod is 10-15 mmTo prepare the cement solution, take 3 parts coarse sand, 1 part fine gravel or gravel And one part cement.

Reference. The depth of the pit for the foundation is chosen to be greater, the less stable the soil layer. In swampy areas, the depth of the foundation is increased up to 1 meter.

To protect the future structure from moisture, the foundation protrusion above the soil layer is made at a height 4-8 cm.

How to Build the Main Part of a BBQ

The construction of the main part begins no earlier than in a week after pouring the last layer of the foundation and includes the following steps:

Photo 7

  1. Laying the first layer of bricks without solution and its alignment.
  2. Pulling the string and laying the bricks to the top of the firebox, securing the hinges for the stove door and the ash pit door.
  3. Installing support boards for laying a flat brick ceiling above the wood compartment below.
  4. Installing reinforcement bars for the firewood compartment ceiling.
  5. Bricklaying to the base of the smoking chamber in the chimney.
  6. Installation of the lower part of the grill for the smoking chamber from rods with a diameter of not less than 1.5 cm.
  7. Laying a brick layer to cool the smoke, the bricks are laid on a small (1-2 cm) distance from each other directly onto steel rods without mortar.
  8. Fixing corners for arranging the lattice above the barbecue.
  9. Laying out the rest of the chimney and installing hooks for smoking products at the top of the smoking chamber.

Every other 3 layers It is important to check all sides of the building with a building level. To bind clay bricks, the solution is prepared as a mixture of sand and cement in relation to 3 to 1.

The mortar for bonding fire-resistant bricks is prepared based on the following calculation:

  • 2 parts cement;
  • 5 parts sand;
  • 3 parts slaked limestone.

All parts are mixed and diluted with water until sour cream consistency.

The bricks on the lower grill of the smoking chamber serve to cool the smoke for smoking. A tray is placed on top of these bricks to collect fat.

The barbecue grill is welded from steel rods diameter 0.8-1.5 cm and is installed above the main firebox.

Reference. It is possible to design an outdoor smokehouse in which there is no smoke passage between the barbecue compartment and the smoking chamber, and an additional firebox is installed instead of a storage area for firewood.

This option allows you to use one type of wood for smoking food and another for barbecue.

In addition to hooks, it is possible to install in the smoking chamber smoking grate, located below the top of the smoking chamber at a distance 15-20 cmTo simplify the design, the arch in the smokehouse can be eliminated by installing horizontal reinforcement bars with bricks placed on them in its place.

External arrangement

Once the main structure is completed, it needs time for the binder to dry - from 7 to 15 days, depending on the weather.

Photo 5. Brick barbecue oven with a smokehouse. The device is lined with decorative artificial stone.

During this time, additional ones are installed decorative and auxiliary elements:

  • lighting;
  • washing;
  • cladding.

Attention! It is prohibited to place Lighting wires on the chimney and near the firebox, and also fasten them with metal staples to the brick, as this may cause a short circuit and electric shock.

The optimal location of the wires is on external vertical supports, located at a distance from the main structure 1-1.5 meters.

Covering the smokehouse with decorative facing tiles is possible in a week after completion of laying using heat-resistant brands of tile adhesive.

Safety requirements

When using a ready-made smokehouse with barbecue, it is important to comply with fire safety requirements. Flammable substances and objects must not be stored closer than one and a half meters to the firebox:

  • gasoline canisters;
  • gas cylinders;
  • flammable mixtures, etc.

Important! Firebricks lose some of their strength after winter frosts and can withstand a maximum of 15 cycles freezing, so through 10-15 years of operation It is important to check the strength of the chimney and firebox structure in the spring.

Convenient spatial arrangement of the barbecue smokehouse in relation to the house and the presence of passages to the firebox from at least two sides will make cooking convenient and safe.

Operation

Photo 9

After construction and complete drying of the bonding solution, you can begin to use the smokehouse. First of all, a fire is lit in all the fireboxes to warm up the structure and check the draft.

When using separate fireboxes, it is recommended to light the smoking firebox with smoldering alder or willow branches, as their smoke is better suited for smoking.

The barbecue fire can be heated using ready-made coals, pouring lighter fluid over them.

Brick structures installed outdoors, they cover them from snow for the winter, to avoid melt water getting into the pores of the bricks and their premature destruction. Before each use of the smokehouse, the hooks for products are cleaned from soot with an iron sponge.

    I did not waste time, materials and nerves. I invited an experienced stove-maker to build such a complex, and I took the version I liked and the scheme of its laying from here. Of course, you can do it yourself, but it is not a fact that everything will turn out so well and beautifully the first time. But helping the stove-maker and gaining experience is only welcome. I took two types of bricks and also facing tiles, but not for the entire stove, but for the contours of the contour.

      Evgeniy, my brother and I made a brick barbecue ourselves according to this article. It wasn't perfect, but it all works! We didn't think it would be better to hire a specialist. I made the cladding from decorative stone, I think it's cooler than a slab. Although, tastes differ.

    When describing the algorithm for pouring the foundation, the author made a number of gross errors.
    The underlying layer is made of sand, not crushed stone. A crushed stone layer only on sandy soils.
    When constructing a reinforcement frame, it is advisable to tie the reinforcement together rather than connect it using welding.
    The foundation is poured not with cement mortar, but with concrete.
    Concrete is placed into the formwork all at once, not in layers.

    This is already some kind of stove on the street. I made a fireplace from white brick in the house, it turned out like a fireplace-stove. You can warm up there, cook and admire the fire. Of course, all the smoke etc. comes out well through the chimney.
    In winter it is very cool and comfortable, there is warmth and food in the house. For the street I prefer a small smokehouse, so that I can put it in - cook in good weather and then remove everything.

      Oleg, there are cases when a summer house has already been built, but you want something more. And you won't light a stove in the house in the summer because you're smoking a couple of fish or making shashlik. That's why they build such combined stoves-smokehouses-barbecues. Well, and if you're going to build such a combi-stove, I would also somehow build in an oven for drying fruits and vegetables.

      Oleg, it's already hot in the garden house in the summer, and it's definitely not worth building a barbecue at home. We have a large barbecue with a grill and a stove located in a warm gazebo.
      Very convenient, we use it both in winter and summer. But in the house there is no smoke or fumes from cooking shashlik or pilaf. And in winter the house is also heated by a stove - a fireplace.
